Pumpkin Spice Lattes at Home

I stock up on pumpkin puree when it comes out in stores during Fall. I know people say that grocery stores carry it all year but I just can't take the chance on it not being there when I have a craving! I saw everyone's Instagram and Facebook pictures about "Pumpkin Spice Lattes are back at Starbucks!" Unfortunately there is not a Starbucks near my house...boo.. and we are on this "budget" lately....boo again...So Starbucks was not happening. I thought about that pumpkin I had hoarded in my pantry. Hmmm, could I do it? I was going to try. It was delicious! Really, I made them every day until my pumpkin ran out! Well, until that particular can ran out. I have more hoarded for a rainy day.

Try this out. You will not be disappointed.


This recipes makes two servings

Ingredients:
 3 TBSP pumpkin puree (not pumpkin pie filling)
2 TBSP Sugar
1 1/2 cups whole milk
1 1/2 TBSP vanilla extract (use the real stuff)
3/4 tsp pumpkin pie spice
1 cup strong brewed coffee or espresso ( I make the coffee in a french press and use the amount of coffee that I normally would but only half of the water)
Whipped cream

Directions:

Heat milk, sugar, pumpkin puree, pumpkin pie spice, and vanilla over medium until steaming hot but not boiling. Stir often

Brew coffee in the meantime.

Froth milk mixture with a milk frother.

Add 1/2 cup of coffee to a mug and the half of the frothed milk mixture. Top with desired amount of whipped cream. Mmmmmmm Drink, pretend that it's Fall already, that you have a sweater on and a fire going.
